To make it like gravy, all we need to do is, switch off the heat once the gravy starts to thicken, and the rest of the procedure remains the same as mentioned in the recipe card below. This gravy/curry goes great with the dishes like chapati, white rice, Idli, and dosa.
Green chilli chicken deep fry
The deep-fried version is similar to the Chicken 65 recipe that we usually enjoy in the south Indian restaurants, and the only difference is, a change in the marination process. Green masala paste is the marinade used here in this recipe similar to the one mentioned in the recipe card below.

The recipe I have shared here is a simple Andhra green chilli chicken fry/dry and it yields 3 people. In this section, let's see how to make/prepare Andhra green chilli chicken at home without compromising the restaurant-style taste.
To make the green chilli chicken, Initially, I marinated the chicken with chili powder, turmeric powder, and salt. Then I allowed it to rest for 15 minutes. Meanwhile, I blended green chillies, ginger, garlic, and coriander leaves into a fine paste and reserved it for later use.
In a pan with medium heat, I poured oil, and then added the cinnamon sticks, green chilies, cumin, and fennel seeds to kick start the cooking process. And allowed them to sizzle without burning. And then I sauteed the onions until they turned soft.
The marinated chicken was then combined along with the onions and cooked for 10 minutes with the pan's lid closed. Once the time passed, I opened the lid and poured in the green masala paste, and gave a good mix.
In addition to that, I allowed the chicken to cook for another 10 minutes. Once cooked, added the curd and gave a quick stir. And then I roasted the chicken by stirring it on and off which helps the dish to avoid burning at the bottom.
Finally, I have added some cumin seeds, curry leaves and gave a nice stir. And yeah, the dish is ready by now and I served this spicy delicious Andhra green chilli chicken with Kerala ghee rice and raita.
For this dry version, I have added the green masala paste while cooking the chicken. But you can also use it well ahead to marinate the chicken itself, even though you may not see huge change in the flavor and taste of the dish.
Though the restaurant-style green chili chicken requires soy sauce, I skipped it totally to enjoy the traditional Indian flavor and taste. But you could try if you would like to have a slight Indo-Chinese flavor to the dish.
Lastly and most importantly this recipe is unique because of the amount of green chilies being used. If you are someone who doesn't like to have lot of spice but still you would like to taste the dish, feel free to reduce the quantity of the green chilli. And of course, we will end up doing it if have kids at home.

- 1 kg Chicken
- 16 Green Chilli
- ½ tsp Turmeric Powder
- 1 tsp Chilli Powder
- Salt, as needed
- 5 Garlic Cloves
- ½ inch Ginger
- ½ cup Coriander Leaves
- ¼ cup Water
- ¼ cup Oil
- 4 Cinnamon Stick
- 3 Cloves
- 1 tsp Fennel Seeds
- 1 + 1 tsp Cumin Seeds
- 2 Onion, chopped
- ¼ cup Curd
- 1 sprig Curry Leaves
To Marinate Chicken
- Take cleaned and bite-size bone-in chicken pieces in a bowl and add turmeric powder, chili powder, salt, and mix well. Allow the chicken to rest for at least 15 minutes
To Prepare Green Chilli Paste
- In a blender add garlic, ginger, 10 green chili, coriander leaves, and water
- Grind it into a smooth paste and reserve for later use
To Prepare Andhra Green Chilli Chicken
- In a pan with medium heat, pour oil and add cinnamon stick, cloves, fennel seeds, cumin seeds, green chili, and saute until it turns aromatic
- Now add the onions and saute until it turns soft
- Add the marinated chicken and give a nice mix
- Close the pan with the lid and allow the chicken to cook for 10 minutes
- Now open the lid and give a quick mix and add the green chili paste and mix until it gets incorporated
- Allow the chicken to cook until it leaves oil from its sides and make sure to stir on and off
- Now add in the curd and mix well
- Roast the chicken for another 5 to 7 minutes. This helps the chicken to absorb all the flavors from the curd and green chilli paste
- Finally, add cumin seeds, curry leaves and give a good mix
- Now the Andhra Green Chilli Chicken is ready for you to taste and enjoy
- Serve this delicious Andhra Green Chilli Chicken with ghee rice, jeera rice, or just with plain white rice
