Rogan Josh is an authentic Indian curry made with lamb or mutton. To prepare the curry, the meat pieces are slow-cooked in an onion-tomato and yogurt-based gravy along with Indian spices and herbs.
In a pan with medium heat, add cinnamon sticks, cloves, cardamom, bay leaves, cumin, and fennel seeds. Allow them to turn aromatic. Make sure not to burn them which completely changes the taste of the curry

Now add the onion puree and saute until the raw aroma disappears

Add ginger-garlic paste and stir until it turns aromatic

Now add the diced tomatoes and puree and give a good mix. And allow it to turn soft

Add salt, paprika, turmeric, chili, garam masala, and coriander powder, and give them a nice mix

Now add in the curry size cut lamb or mutton pieces and mix them until all the masala coat evenly on them

Close the pan with the lid and cook the mixture for 20 minutes

Open the lid and give a quick stir and again close and cook for another 10 minutes

Now open the lid and stir in the yogurt to the lamb curry. Make sure to whisk the yogurt well before adding it to the hot curry which avoids the curdling process of the curd

Add fennel powder, coriander, or cilantro leaves and mix well. Allow it to simmer for 5 to 7 minutes or until it leaves oil from its sides. And now the delicious lamb rogan josh is ready for you to taste and enjoy
