In a pressure cooker with medium heat, pour ghee and add bay leaves, cinnamon stick, star anise, cloves, cardamom, fennel seeds, and saute until it turns aromatic

Add onions, green chili, and sauté until onions turn soft and caramelizes

STEP

Now add ginger garlic paste and give a nice mix until the raw aroma leaves

Add chili powder, coriander powder, salt, and mix well

STEP

Now add the mint leaves and saute until the mint leaves turn aromatic

Add green peas or matar to the above mixture. Mix and cook for 2 to 3 minutes

Now add the soaked basmati rice and mix everything gently

Pour the water and give a final mix

Close the lid of the pressure/rice cooker with the regulator on and cook for two whistles. Switch off the heat and allow the pressure to release naturally
